INGREDIENTS
6 oz Salmon Fillet
1 cup Asparagus
0.75 cup Sweet Potato (mashed)
2 tbsp Nonfat Greek Yogurt
1 tsp Extra Virgin Olive Oil (for salmon)
0.5 tsp Extra Virgin Olive Oil (for asparagus)
Salt & Pepper to taste
PREPARATION
Preheat oven to 400°F.
Season the asparagus lightly with salt, pepper, and toss with 0.5 tsp olive oil. Spread them on a baking sheet and roast for about 10-12 minutes or until tender.
Meanwhile, peel and cube the sweet potato, boil until tender, then mash with 2 tbsp nonfat Greek yogurt, salt, and pepper until smooth.
Season the salmon fillet with salt and pepper. Heat 1 tsp of olive oil in a skillet over medium-high heat.
Place the salmon skin-side down (if applicable) and sear for about 3-4 minutes per side, until the exterior is crisp and the inside is just opaque.
Plate the salmon alongside the roasted asparagus and a serving of sweet potato mash. Serve warm.
