PREPARATION
Press the tofu to remove excess moisture and cut it into bite-sized cubes.
In a bowl, toss the tofu cubes with cornstarch, 0.5 tsp salt, 0.5 tsp black pepper, and garlic powder until evenly coated.
Preheat your oven to 425°F (220°C). On a baking sheet, spread out the broccoli florets, drizzle with half of the olive oil, and season with a pinch of salt and pepper.
Roast the broccoli in the oven for 20-25 minutes, stirring halfway through, until tender and slightly charred.
