INGREDIENTS
2.5 ounces Chicken Breast (approx. 70g)
1 medium Sweet Potato (approx. 130g)
1 cup Green Beans (approx. 125g)
3 teaspoons Olive Oil (approx. 13.5g)
1 clove Garlic
Salt & Pepper to taste
PREPARATION
Pat the chicken breast dry and season lightly with salt and pepper.
Heat a non-stick skillet over medium-high heat with a small portion of olive oil. Sear the chicken breast for 3-4 minutes on each side until fully cooked and nicely browned.
Meanwhile, peel and dice the sweet potato. Boil in a small pot of water until tender, about 10-12 minutes. Drain and mash with a pinch of salt.
Trim the ends of the green beans. In another skillet, heat 1 teaspoon of olive oil over medium heat and sauté the minced garlic for about 30 seconds. Add the green beans and cook for 4-5 minutes until tender-crisp. Season with salt and pepper.
For finishing, drizzle the remaining olive oil over the green beans and plate alongside the chicken and sweet potato mash.
Serve immediately and enjoy your balanced and flavorful dinner.
