INGREDIENTS
6.5 oz Salmon Fillet
100 g Asparagus Spears
1 cup Cauliflower, chopped
1 clove Garlic
1 tsp Olive Oil (for mash)
1 tsp Olive Oil (for drizzle)
1 tsp Unsalted Butter
Pinch Salt
Pinch Black Pepper
PREPARATION
Pat the salmon dry and season both sides with a pinch of salt and black pepper.
Heat a non-stick skillet over medium-high heat. Add the salmon skin-side down (if skin-on) and sear for about 3-4 minutes per side, adjusting time based on thickness, until the exterior is crisp and the interior is just cooked.
Meanwhile, steam the asparagus in a steamer or a covered pot with a little water for about 4-5 minutes until tender yet crisp.
In a small pot, combine the chopped cauliflower and minced garlic with a small splash of water. Allow to simmer for about 8-10 minutes until the cauliflower is very tender.
Drain the cauliflower and garlic, then transfer to a bowl. Add 1 teaspoon olive oil and 1 teaspoon unsalted butter. Mash until smooth; season with a pinch of salt and pepper.
Plate the garlic cauliflower mash, arrange the steamed asparagus beside it, and top with the seared salmon. Drizzle 1 teaspoon olive oil over the salmon for added flavor.
Serve warm and enjoy your balanced, nutrient-rich dinner.
