Enjoy a succulent pork tenderloin roasted to perfection with a fragrant herb crust, paired with crisp, tender asparagus spears. This dish is light yet satisfying, combining juicy meat with the fresh, earthy flavors of roasted garlic and herbs for a deliciously balanced meal.
INGREDIENTS
6 ounces Pork Tenderloin
1 bunch Asparagus (approx. 8 spears)
1 tablespoon Extra Virgin Olive Oil
2 cloves Garlic
2 sprigs Fresh Rosemary
2 sprigs Fresh Thyme
Salt and Black Pepper to taste
PREPARATION
Preheat your oven to 425°F.
Pat the pork tenderloin dry with paper towels. Rub it lightly with olive oil and season generously with salt and pepper.
Finely mince the garlic and chop the fresh rosemary and thyme. Press the herbs and garlic onto the pork tenderloin to form a fragrant crust.
Trim the woody ends off the asparagus. Toss the asparagus with a drizzle of olive oil, salt, and pepper on a baking sheet.
Place the pork tenderloin on a separate baking tray. Put both trays in the oven.
Roast the pork for about 20-25 minutes or until it reaches an internal temperature of 145°F. Roast the asparagus for 12-15 minutes until tender and slightly crispy.
Once done, let the pork rest for 5 minutes before slicing. Serve slices of herb-roasted pork tenderloin alongside the crispy roasted asparagus.
