A dish that brings harmony to both flavor and nutrition.
INGREDIENTS
7 oz Salmon Fillet
1 cup Asparagus
1 cup Cauliflower
2 tsp Olive Oil
1/2 tsp Butter
1 Garlic Clove
1 Lemon Wedge
Salt and Pepper to taste
PREPARATION
Pat the salmon dry and season both sides with salt and pepper.
Heat 1 tsp of olive oil in a non-stick skillet over medium-high heat. Once hot, add the salmon fillet skin-side down and sear for about 3-4 minutes until a crispy crust develops.
Flip the salmon carefully and cook for an additional 3-4 minutes or until desired doneness is reached. Squeeze a lemon wedge over the salmon during the last minute of cooking.
Meanwhile, steam the asparagus in a steamer basket over simmering water for about 4-5 minutes until tender but still crisp. Season lightly with salt.
For the cauliflower mash, steam or boil the cauliflower florets (from 1 cup raw cauliflower) along with a garlic clove until they are soft, about 8-10 minutes. Drain well, then transfer to a bowl.
Add 1 tsp olive oil and 1/2 tsp butter to the cauliflower along with salt and pepper. Mash until smooth and creamy. Adjust seasoning to taste.
Plate the seared salmon alongside the steamed asparagus and a generous scoop of cauliflower mash. Garnish with an extra squeeze of lemon if desired and serve immediately.
