1 tsp Olive Oil (for green beans)

PREPARATION
Pat the salmon dry and season with salt and pepper on both sides.
Heat 1.5 teaspoons of olive oil in a skillet over medium-high heat. Once hot, add the salmon and sear for about 3-4 minutes per side until the exterior is golden and the inside is just cooked through. Remove from the pan and set aside.
While the salmon rests, steam the cauliflower florets until very tender, about 8-10 minutes.
Transfer the steamed cauliflower to a bowl and add the Greek yogurt. Season with a pinch of salt and pepper, then mash until smooth and creamy.
In another pan, heat 1 teaspoon of olive oil over medium heat. Add minced garlic (from 2 cloves) and sauté for about 30 seconds until fragrant.
