Enjoy a vibrant dish featuring succulent shrimp tossed in a zesty sesame-ginger marinade, perfectly paired with delicate zucchini noodles. The dish is finished with a crispy coating and a sprinkle of toasted sesame seeds for a delightful crunch and a balanced, fresh flavor.
INGREDIENTS
7 oz Shrimp, raw, peeled & deveined
1 medium Zucchini (spiralized into noodles)
2 tsp Sesame Oil
2 cloves Garlic, minced
1 tsp Fresh Ginger, grated
1 tbsp Low-Sodium Soy Sauce
1 tsp Sesame Seeds
1 tsp Cornstarch
PREPARATION
Pat dry the shrimp with paper towels and toss them with the cornstarch until evenly coated.
Heat 1 tsp of sesame oil in a large non-stick skillet over medium-high heat. Add the shrimp and cook until they start to turn pink and become slightly crispy, about 2-3 minutes per side. Remove the shrimp and set aside.
In the same skillet, add the remaining 1 tsp sesame oil along with the minced garlic and grated ginger. Sauté for about 30 seconds until fragrant.
Add the zucchini noodles to the skillet and toss gently for 1-2 minutes until just tender but still retaining a slight crunch.
Return the cooked shrimp to the pan, drizzle the soy sauce over, and gently combine all the ingredients so that the flavors meld together.
Transfer the dish to a serving plate and sprinkle with sesame seeds. Serve immediately and enjoy the vibrant, crispy flavors.
