Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F. Lightly grease a baking sheet with olive oil.
Season the chicken breast with salt and pepper. Lightly coat the chicken with panko breadcrumbs by patting them onto the surface.
Place the chicken on the baking sheet and drizzle a little olive oil over it. Bake for 15-18 minutes or until the chicken reaches an internal temperature of 165°F and the coating is crispy.
While the chicken bakes, chop the romaine lettuce and warm the whole wheat tortilla in a dry skillet or microwave for 20 seconds.
Slice the cooked chicken into strips. Lay the tortilla flat and layer with chopped romaine lettuce.
