INGREDIENTS
6 oz Salmon Fillet
1 cup Asparagus
1.5 cups Cauliflower
2 tbsp Nonfat Greek Yogurt
2 tbsp Unsweetened Almond Milk
1 tsp Olive Oil
Salt and Pepper (to taste)
1 tsp Lemon Juice
PREPARATION
Pat the salmon fillet dry and season both sides with salt and pepper.
Preheat a non-stick skillet over medium-high heat and add the olive oil.
Place the salmon skin-side down in the hot skillet and sear for about 3-4 minutes, then flip and sear the other side for another 3-4 minutes until cooked to your desired doneness.
While the salmon is cooking, steam the asparagus until tender, about 4-5 minutes.
For the cauliflower mash, steam or boil the cauliflower florets until very soft, about 10 minutes.
Transfer the cooked cauliflower to a blender or use a hand masher. Add Greek yogurt and almond milk. Blend or mash until smooth; season with salt and pepper to taste.
Squeeze lemon juice over the seared salmon for a bright finishing touch.
Plate the salmon alongside the steamed asparagus and a scoop of cauliflower mash. Serve immediately.
