PREPARATION
Preheat your oven to 425°F (220°C). Toss the baby potatoes with the olive oil, salt, and pepper, and spread them out on a baking sheet. Roast for about 20-25 minutes until crispy and tender.
While the potatoes are roasting, pat the sirloin steak dry with a paper towel and season both sides generously with salt and pepper.
