INGREDIENTS
6 oz Lean Ground Turkey
200g Sweet Potato
1 cup Green Beans
1 tsp Olive Oil
1 clove Garlic
Salt & Pepper
PREPARATION
Peel and dice the sweet potato into small cubes. Boil in lightly salted water until tender, about 15 minutes, then drain and mash using a fork or potato masher.
While the sweet potato cooks, finely mince the garlic. Trim the ends of the green beans.
In a skillet over medium heat, add half of the olive oil and lightly sauté the minced garlic for about 30 seconds until fragrant.
Add the green beans to the skillet and sauté until tender-crisp, around 5-7 minutes. Season with salt and pepper to taste and remove from heat.
In a mixing bowl, season the lean ground turkey with salt and pepper, then form into patties.
Heat the remaining olive oil in a non-stick skillet over medium-high heat. Sear the turkey patties on each side for about 4-5 minutes until browned and cooked through.
Plate the seared turkey patties alongside a serving of garlic green beans and a generous scoop of sweet potato mash. Serve immediately.
