1 medium Sweet Potato
0.5 small Yellow Onion
0.5 cup diced Red Bell Pepper
1 cup Spinach
1 tsp Olive Oil
1 large Egg
2 Egg Whites
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Dice the sweet potato into small cubes. Toss them in a small amount of olive oil, salt, and pepper, then spread evenly on the baking sheet.
Roast the sweet potato cubes in the oven for about 20-25 minutes until tender and slightly crispy.
While the sweet potato is roasting, dice the onion and red bell pepper. Slice the turkey sausage into rounds.
Heat the remaining olive oil in a skillet over medium heat. Sauté the onion and bell pepper until soft and fragrant, about 4-5 minutes.
Add the turkey sausage to the skillet and cook until browned, about 5-6 minutes.
