INGREDIENTS
100 grams Salmon Fillet
200 grams Sweet Potato
2 cups Spinach
1.2 tablespoons Extra Virgin Olive Oil
1 Garlic Clove
Salt and Pepper to taste
PREPARATION
Begin by peeling and cubing the sweet potato. Boil or steam the cubes until tender, then mash them with 0.6 tablespoons of extra virgin olive oil, a pinch of salt, and pepper to taste. Set aside keeping them warm.
Pat the 100g salmon fillet dry and season both sides lightly with salt and pepper.
Heat a non-stick skillet over medium-high heat and add the remaining 0.6 tablespoons of olive oil. Once hot, place the salmon skin-side down (if applicable) and sear for about 3-4 minutes until a golden crust forms. Flip the salmon and cook for another 3 minutes until just cooked through.
In another pan over medium heat, add the minced garlic (from one clove) to a small drizzle of olive oil. Once fragrant, add 2 cups of fresh spinach and sauté until wilted, about 2 minutes. Season with a little salt and pepper.
Plate the sweet potato mash, top with the seared salmon fillet, and serve the garlic sautéed spinach on the side for a balanced and flavorful meal.
