Enjoy a delectable fusion of crispy tofu and vibrant vegetables tossed in a savory stir fry sauce, accompanied by protein-packed edamame and nutty brown rice. This dish delivers satisfying textures with a light crunch from gently blanched snow peas and red bell pepper, finished off with a sprinkle of fresh green onions for brightness.
INGREDIENTS
250g Extra-Firm Tofu
0.5 cup Shelled Edamame (~100g)
0.5 cup Cooked Brown Rice (~100g)
0.5 medium Red Bell Pepper
0.5 cup Snow Peas
1 tbsp Sesame Oil
1 tbsp Low-Sodium Soy Sauce
1 tsp Cornstarch
2 cloves Garlic
1 tsp Fresh Ginger
2 sprigs Green Onions
PREPARATION
Press the tofu for at least 15 minutes to remove excess water. Cut into cubes.
In a bowl, toss tofu cubes with cornstarch until evenly coated.
Heat sesame oil in a large non-stick pan or wok over medium-high heat.
Add tofu cubes and fry until golden and crispy on all sides. Remove tofu and set aside.
In the same pan, stir-fry minced garlic and grated ginger until fragrant.
Add sliced red bell pepper and snow peas, stir-frying for about 2-3 minutes until tender but still crisp.
Return the tofu to the pan and drizzle low-sodium soy sauce over the mixture. Toss gently to combine all flavors.
Warm the pre-cooked brown rice and shelled edamame separately, or incorporate them directly into the stir fry as desired.
Plate the crispy tofu stir fry alongside the brown rice and edamame, and garnish with chopped green onions. Serve immediately.
