A vibrant stir-fry featuring crispy, extra-firm tofu tossed with an assortment of fresh vegetables in a savory sesame-ginger sauce. The dish is accented with a sprinkle of toasted sesame seeds, delivering a delightful crunch and a burst of nutty flavor perfect for a balanced meal.
INGREDIENTS
350 grams extra firm tofu
1 tablespoon sesame oil
1 medium red bell pepper
1 cup chopped broccoli
1/2 cup snap peas
1 medium carrot
2 cloves garlic
1 teaspoon fresh ginger
1.5 tablespoons low sodium soy sauce
1 tablespoon rice vinegar
1 teaspoon sesame seeds
1 tablespoon cornstarch
PREPARATION
Press the tofu to remove excess moisture and cut it into bite-sized cubes. In a bowl, gently toss the tofu cubes with cornstarch until evenly coated.
Heat sesame oil in a large non-stick skillet or wok over medium-high heat. Once hot, add the tofu cubes and fry until crispy and golden on all sides. Remove and set aside.
In the same skillet, add minced garlic and grated ginger. Sauté briefly until aromatic.
Add the sliced red bell pepper, broccoli, snap peas, and carrot to the skillet. Stir-fry the vegetables for about 4-5 minutes until they are tender-crisp.
Return the crispy tofu to the skillet. Drizzle in low sodium soy sauce and rice vinegar, stirring well to combine and heat through.
Finish by sprinkling sesame seeds over the stir-fry. Taste and adjust seasonings if needed, then serve immediately.
