Preheat your oven to 425°F and line a baking sheet with parchment paper. Lightly spray with olive oil.
In a shallow bowl, combine the almond flour with a pinch of salt and pepper. In another small bowl, lightly beat the egg white.
Dip each chicken breast in the egg white, then coat evenly with the almond flour mixture.
Place the coated chicken on the prepared baking sheet and lightly spray the top with olive oil spray.
Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through with the coating turning crispy.
While the chicken is baking, prepare the sauce: In a small saucepan over medium heat, combine the honey, low-sodium soy sauce, minced ginger, and minced garlic.
Simmer the sauce for about 3-4 minutes until slightly thickened, stirring frequently to avoid burning.
Once the chicken is done, remove it from the oven and drizzle the sweet and spicy ginger garlic sauce over the top, or serve on the side.
Garnish with additional black pepper if desired, and enjoy your meal!
