The dish is accented with a splash of olive oil and a hint of lemon, creating a mix of rich flavor and freshness that's both satisfying and nourishing.
INGREDIENTS
3.5 ounce-equivalent Salmon Fillet (100g)
1 cup Green Beans (125g)
0.75 medium Sweet Potato (85g)
1 tbsp Olive Oil (14g)
1 clove Garlic
1 Lemon Wedge
Salt & Pepper to taste
PREPARATION
Pat the salmon fillet dry and season lightly with salt and pepper.
Heat a non-stick skillet over medium-high heat with a small drizzle of olive oil. Once hot, add the salmon, skin-side down if applicable, and sear for about 3-4 minutes per side until lightly browned and just cooked through.
While the salmon is cooking, preheat your oven to 400°F. Toss the green beans and diced sweet potato with olive oil, minced garlic, salt and pepper on a baking sheet.
Roast the vegetables in the oven for about 15-20 minutes, or until the sweet potatoes are tender and the green beans are crisp-tender.
Plate the seared salmon alongside the roasted sweet potatoes and garlic green beans, and finish with a squeeze of fresh lemon over the top.
Serve immediately and enjoy your balanced dinner!
