INGREDIENTS
7 oz Cod Fillet
1 cup Fresh Green Beans
2 tbsp Extra Virgin Olive Oil
1 clove Garlic
1 wedge Lemon
Pinch of Salt
Dash of Black Pepper
PREPARATION
Pat the cod fillet dry with paper towels and season both sides with salt and black pepper.
Trim the green beans and rinse them thoroughly. Pat dry.
Heat 1 tablespoon of extra virgin olive oil in a non-stick skillet over medium-high heat. Add the green beans and sauté for about 4-5 minutes until they begin to get crispy but remain tender. Remove the beans and set aside.
In the same skillet, add the remaining oil. Add the minced garlic (or garlic crushed from a whole clove) and sauté briefly until fragrant, about 30 seconds.
Place the seasoned cod fillet in the skillet. Cook for about 3-4 minutes per side, depending on thickness, until the fish is opaque and flakes easily with a fork.
Return the green beans to the pan briefly to warm them up and mix with the garlic and any remaining oil.
Squeeze the lemon wedge over the cod and beans just before serving for a bright finish.
Plate the cod fillet alongside the crispy green beans and serve immediately.
