INGREDIENTS
350g Firm Tofu
1 cup Broccoli
1 medium Carrot
1 medium Red Bell Pepper
1/2 cup Snow Peas
2 cloves Garlic
1 tsp Ginger
1 tbsp Sesame Seeds
1 tsp Sesame Oil
1 tbsp Low-Sodium Soy Sauce
PREPARATION
Press the tofu to remove excess moisture, then cut into 1-inch cubes.
In a bowl, toss tofu cubes with a small drizzle of sesame oil and a pinch of salt if desired.
Heat a non-stick skillet over medium-high heat. Add the tofu and cook until all sides are golden and crispy, about 8-10 minutes. Remove tofu from the skillet and set aside.
In the same skillet, add a teaspoon of sesame oil. Sauté minced garlic and grated ginger for about 30 seconds until fragrant.
Add chopped broccoli, sliced carrot, diced red bell pepper, and snow peas. Stir-fry the vegetables for 4-5 minutes until tender-crisp.
Return the tofu to the skillet. Drizzle the low-sodium soy sauce over the mixture and toss to combine well.
Sprinkle toasted sesame seeds over the stir-fry before serving. Adjust seasoning as needed and serve warm.
