300g Extra-Firm Tofu

1 tsp Cornstarch
1 tbsp Tamari Sauce
1 tsp Sesame Oil
1 clove Garlic, minced
1 tsp Fresh Ginger, grated
1 cup Mixed Greens
50g Shelled Edamame
PREPARATION
Press the tofu to remove excess moisture and cut it into 1-inch cubes.
In a bowl, gently toss the tofu cubes with cornstarch until evenly coated.
Heat a non-stick skillet over medium heat and lightly spray with oil. Sauté the tofu cubes until all sides are golden and crispy, about 8-10 minutes. Remove from the pan and set aside.
In the same skillet, add minced garlic and grated ginger; sauté briefly until fragrant.
Stir in the peanut butter, tamari sauce, and sesame oil. If the sauce is too thick, add a splash of water to reach your desired consistency.
Return the crispy tofu to the skillet and gently toss to coat in the peanut sauce.
In another pan, quickly sauté the mixed greens and edamame for 2-3 minutes until just wilted but still vibrant.
