INGREDIENTS
200g Firm Tofu
300g Broccoli
1/4 cup Shelled Edamame
1 tbsp Cornstarch
1 tsp Sesame Oil
1 tbsp Soy Sauce
1 tsp Garlic Powder
1/2 tsp Black Pepper
Pinch of Salt
PREPARATION
Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
Press the tofu between paper towels to remove excess moisture, then cut into 1-inch cubes.
Gently toss tofu cubes with cornstarch, a pinch of salt, garlic powder, and black pepper until evenly coated.
Spread the tofu cubes on half of the baking sheet. On the other half, toss broccoli florets with a drizzle of sesame oil, soy sauce, and a pinch of salt.
Place the baking sheet in the oven and roast for 25-30 minutes. Flip the tofu and broccoli halfway through the cooking time to ensure even crisping and browning.
While the tofu and broccoli roast, heat the shelled edamame briefly in a pan or microwave until just warmed.
Once everything is roasted to your liking, combine the crispy tofu, roasted broccoli, and warm edamame in a bowl, gently tossing them together.
Serve immediately, enjoying the mix of textures and flavors.
