INGREDIENTS
6 oz Chicken Breast
1 tsp Olive Oil
1 medium Russet Potato
2 cloves Garlic
1 cup Steamed Mixed Vegetables (Carrots & Green Beans)
1 tbsp Mixed Herbs (Rosemary, Thyme)
PREPARATION
Preheat your oven to 400°F.
Rub the chicken breast with olive oil, mixed herbs, and a pinch of salt and pepper.
Place the chicken breast on a baking sheet and roast in the oven for about 20-25 minutes, or until the internal temperature reaches 165°F.
Meanwhile, peel and dice the russet potato. Boil in lightly salted water until tender, about 15 minutes.
In a small pan, sauté minced garlic in a teaspoon of olive oil until fragrant. Drain the boiled potatoes and return them to the pot.
Mash the potatoes with the garlic mixture, adding a little salt and pepper to taste.
Steam the mixed vegetables (carrots and green beans) until just tender, about 5-7 minutes.
Plate the roasted chicken breast with a side of garlic mashed potatoes and steamed vegetables. Garnish with extra fresh herbs if desired.
