PREPARATION
Dice the chicken breast into small, bite-sized pieces. Season lightly with salt and pepper if desired.
Heat 1 tsp of olive oil in a nonstick skillet over medium heat. Add the diced chicken and sauté until cooked through, about 5-6 minutes.
