INGREDIENTS
4 oz Lean Ground Turkey
1 medium Bell Pepper
1 cup Cauliflower Rice
1/2 cup Diced Tomatoes
1/2 medium Onion
1 clove Garlic
1 tsp Olive Oil
1/2 tsp Cumin
Salt and Pepper to taste
PREPARATION
Preheat the oven to 375°F (190°C).
Slice the top off the bell pepper and remove the seeds and membranes, setting the pepper aside.
Heat olive oil in a skillet over medium heat. Add the chopped onion and garlic, sautéing until softened, about 2-3 minutes.
Add the lean ground turkey to the skillet, breaking it apart with a spatula. Cook until the meat is browned, approximately 5-7 minutes.
Stir in the cauliflower rice, diced tomatoes, and cumin. Season with salt and pepper. Let the mixture simmer for a couple of minutes to allow flavors to meld.
Stuff the prepared bell pepper with the turkey and vegetable mixture, packing it well.
Place the stuffed pepper in a baking dish and cover loosely with foil. Bake for 25-30 minutes until the pepper is tender.
Remove from the oven and let cool slightly before serving.
