1 bunch Asparagus (approx. 200g)
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Press the tofu to remove excess moisture, then cut it into 1-inch cubes.
In a bowl, gently toss the tofu cubes with olive oil, cornstarch, garlic powder, smoked paprika, salt, and pepper until evenly coated.
Spread the tofu cubes in a single layer on one half of the baking sheet.
Trim the woody ends off the asparagus and place them on the other half of the baking sheet. Drizzle lightly with olive oil and season with salt and pepper.
Bake for 25-30 minutes until the tofu is golden and crispy and the asparagus is tender, flipping the tofu halfway through for even crispiness.
