INGREDIENTS
7 oz Salmon Fillet
1 medium Sweet Potato
1 cup Green Beans
2 cloves Garlic
1 tbsp Olive Oil
Salt and Pepper (to taste)
PREPARATION
Pat the salmon fillet dry and season it with salt and pepper.
Heat a non-stick skillet over medium-high heat and add half the olive oil.
Sear the salmon skin-side down for about 4-5 minutes, then flip and cook for an additional 3-4 minutes until the center is just opaque. Remove and let rest.
Meanwhile, peel and cube the sweet potato. Boil in lightly salted water until tender, then drain and mash with a drizzle of olive oil, salt, and pepper.
Trim the green beans and steam them for about 4-5 minutes until crisp-tender.
In a small pan, heat the remaining olive oil over medium heat, add minced garlic, and sauté briefly until fragrant. Toss the steamed green beans in the garlic oil, and season with salt and pepper.
Plate the sweet potato mash alongside the salmon and garlic green beans. Serve warm and enjoy.
