1 medium Zucchini
2 medium Fresh Tomatoes
1 tbsp Extra Virgin Olive Oil
2 cloves Garlic
1 tbsp Grated Parmesan Cheese

Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F.
In a bowl, combine the lean ground turkey, one finely minced garlic clove, a pinch of salt, and pepper. Form the mixture into small meatballs.
Place the meatballs on a baking sheet lined with parchment paper and bake for 15-18 minutes until cooked through.
While the meatballs are baking, prepare the fresh tomato sauce. Finely dice the two medium tomatoes and mince the remaining garlic. In a small saucepan, heat the olive oil over medium heat and sauté the garlic until fragrant. Add the diced tomatoes, a pinch of salt and pepper, and let it simmer for about 5-7 minutes.
