INGREDIENTS
7 oz Salmon Fillet (~198g)
1 cup Asparagus (~134g)
1 cup Cauliflower (~107g)
2 tsp Olive Oil (~10g)
1 tbsp Nonfat Greek Yogurt (~15g)
1 clove Garlic
Salt and Black Pepper to taste
PREPARATION
Pat the salmon dry and season with salt and black pepper on both sides.
Preheat a non-stick skillet over medium-high heat and add the olive oil.
Once the oil is shimmering, place the salmon fillet skin-side down. Sear for about 3-4 minutes until a crispy crust forms, then flip and cook for an additional 3-4 minutes, or until the fish is cooked through.
While the salmon cooks, steam the asparagus in a steamer basket over boiling water for about 4-5 minutes until tender yet crisp.
For the mashed cauliflower, steam the cauliflower florets (or microwave chopped cauliflower with a splash of water) until very soft, about 8-10 minutes.
In a bowl, combine the steamed cauliflower, garlic (minced or pressed), nonfat Greek yogurt, a pinch of salt and pepper, and blend until smooth. Adjust seasoning as needed.
Plate the seared salmon alongside the steamed asparagus and a generous serving of garlic mashed cauliflower. Serve warm and enjoy!
