INGREDIENTS
6 oz Salmon Fillet
1 cup Fresh Asparagus
1 medium head Cauliflower (approx 200g used)
1 tbsp Olive Oil (for mash)
1/2 tsp Olive Oil (for searing)
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat and add 1/2 teaspoon of olive oil.
Place the salmon in the skillet skin-side down (if applicable) and sear for about 3-4 minutes per side until a crispy crust forms and the inside is just cooked through.
While the salmon is cooking, trim the tough ends from the asparagus and steam them until just tender, approximately 4-5 minutes.
For the cauliflower mash, cut the cauliflower into florets and steam until soft, about 8-10 minutes.
Transfer the steamed cauliflower to a blender or food processor, add 1 tablespoon of olive oil, and blend until smooth. Season with salt and pepper to taste.
Plate the salmon alongside the steamed asparagus and a generous serving of cauliflower mash. Serve immediately.
