1 cup Cauliflower florets (107g)
1/2 cup Plain Nonfat Greek Yogurt (120g)
1 tbsp Olive Oil
1/2 tbsp Unsalted Butter
1 Garlic Clove
PREPARATION
Pat the lean beef dry and season lightly with salt and pepper.
Heat olive oil in a skillet over medium-high heat. Once hot, add the beef and sear for about 3-4 minutes per side for medium-rare, or longer to your desired doneness. Remove the beef and let it rest.
In the same skillet, add the minced garlic and sauté briefly until fragrant. Add green beans and sauté for about 4-5 minutes until tender-crisp. Season with salt and pepper.
Meanwhile, steam the cauliflower florets until very tender, approximately 8-10 minutes.
