Seared Salmon with Garlic Green Beans and Mashed Sweet Potatoes
Pan-seared wild salmon paired with creamy mashed sweet potatoes and garlic-sautéed green beans, finished with a squeeze of lemon for a bright, zesty touch.
INGREDIENTS
6.5 oz Wild Atlantic Salmon fillet
150g Sweet Potato, peeled and cubed
1 cup fresh Green Beans, trimmed
1 tsp Olive Oil
0.5 tsp Ghee
2 cloves Garlic, minced
1 tbsp fresh Lemon Juice
Pinch of Sea Salt and Black Pepper
PREPARATION
Place the cubed sweet potatoes in a pot of salted water and bring to a boil, cooking for 12-15 minutes until tender.
Drain the sweet potatoes and mash them thoroughly with the ghee and a pinch of sea salt until smooth.
While the potatoes cook, heat the olive oil in a large non-stick skillet over medium-high heat.
Season the salmon fillet with salt and pepper, then place it in the skillet skin-side down.
Sear the salmon for 4-5 minutes per side until the exterior is golden and the fish flakes easily with a fork.
Remove the salmon from the skillet and let it rest on a plate.
In the same skillet, add the green beans and minced garlic, sautéing for about 5 minutes until the beans are tender-crisp and the garlic is fragrant.
Serve the seared salmon over the mashed sweet potatoes with the garlic green beans on the side, drizzling everything with fresh lemon juice.
