Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon served over a creamy cauliflower mash with garlicky green beans, finished with a squeeze of bright lemon and a buttery-crisp skin.
INGREDIENTS
6.5 ounces Salmon Fillet
2 cups Cauliflower florets
1 cup Green Beans
2 tablespoons Non-fat Plain Greek Yogurt
2 cloves Garlic
2 teaspoons Avocado Oil
PREPARATION
Steam cauliflower florets until very tender, about 10-12 minutes.
Pat the salmon fillet completely dry with a paper towel and season with salt and pepper.
Heat one teaspoon of avocado oil in a non-stick skillet over medium-high heat and sear the salmon skin-side down for 4-5 minutes until the skin is crisp.
Flip the salmon and cook for another 2-3 minutes until desired doneness is reached, then remove from the pan to rest.
In the same skillet, add the remaining teaspoon of oil and sauté the green beans and minced garlic for 5-6 minutes until tender-crisp.
Drain the cauliflower well and blend or mash with the Greek yogurt until smooth and creamy.
Plate the cauliflower mash, top with the salmon, and serve the garlicky green beans on the side.
