Garlic Butter Steak Bites with Pasta
Pan-seared sirloin steak bites tossed in a velvety garlic ghee sauce and served over al dente whole grain pasta with a bright squeeze of lemon.
INGREDIENTS
5 oz Sirloin steak
0.75 cup Cooked whole grain penne
0.5 tbsp Ghee
0.5 tbsp Extra virgin olive oil
2 clove Garlic
1 tbsp Fresh parsley
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Lemon juice
PREPARATION
Prepare the whole grain penne according to package directions until al dente, then drain and set aside.
Pat the sirloin steak dry with paper towels and cut into 1-inch bite-sized cubes.
Season the steak bites evenly with the sea salt and black pepper.
Heat the extra virgin olive oil in a large cast-iron skillet over medium-high heat until shimmering.
Add the steak bites in a single layer, searing for 2 minutes per side until a golden-brown crust forms, then remove steak from the pan and set aside.
Reduce heat to medium and add the ghee to the same skillet, scraping up any browned bits from the bottom.
Add the minced garlic to the ghee and sauté for 30-60 seconds until fragrant but not burnt.
Return the steak bites and the cooked pasta to the skillet, tossing thoroughly to coat in the garlic butter sauce.
Stir in the fresh chopped parsley and lemon juice before serving immediately.
