PREPARATION
Heat one teaspoon of olive oil in a non-stick skillet over medium heat.
Add the sliced turkey sausage and sauté until browned and heated through.
Add the fresh spinach to the skillet and cook for 1-2 minutes until just wilted, then remove the sausage and spinach from the pan and set aside.
Wipe the pan clean and add the remaining teaspoon of olive oil.
Pour the egg whites into the skillet and cook undisturbed until the edges begin to set and turn opaque.
Gently lift the edges of the omelette with a spatula to allow any uncooked egg whites to flow underneath.
Once the egg whites are almost completely set, place the cooked sausage, spinach, and feta cheese onto one half of the omelette.
