Seared Salmon Filet with Steamed Green Beans and Sweet Potato Mash
Pan-seared salmon served with a creamy sweet potato mash and vibrant steamed green beans, finished with a touch of silky ghee.
INGREDIENTS
7 ounces Wild Atlantic Salmon Filet
150 grams Sweet Potato
1 cup Fresh Green Beans
1 teaspoon Ghee
PREPARATION
Peel and cube the sweet potato then boil in a pot of water until soft.
Drain the potatoes and mash them thoroughly with half of the ghee and a pinch of sea salt until smooth.
Place the green beans in a steamer basket over boiling water and cook until tender-crisp.
Pat the salmon dry with a paper towel and season both sides with sea salt and cracked black pepper.
Melt the remaining ghee in a cast-iron skillet over medium-high heat.
Place the salmon in the skillet and sear for four to five minutes per side until the exterior is golden and the fish flakes easily with a fork.
Serve the salmon over the sweet potato mash with the steamed green beans on the side.
