Korean Mixed Rice Bowl with Beef
Sautéed lean beef and vibrant vegetables served over nutty brown rice, topped with a silky fried egg and spicy gochujang sauce.
INGREDIENTS
4 oz ground beef
0.13 cup cooked brown rice
1 large egg
1 cup fresh spinach
0.5 cup carrots
0.5 cup zucchini
1 tbsp gochujang
1 tbsp tamari
0.25 tsp toasted sesame oil
0.25 tsp garlic powder
0.25 tsp sea salt
0.25 tsp black pepper
PREPARATION
Heat a non-stick skillet over medium-high heat and brown the ground beef until cooked through.
Season the beef with garlic powder, sea salt, black pepper, and the tamari.
Remove beef from the pan and set aside; in the same pan, lightly sauté the carrots, zucchini, and spinach until tender-crisp.
Wipe the pan and lightly fry the egg until the white is set but the yolk remains runny.
Place the warm brown rice in a bowl and arrange the beef and vegetables in separate sections on top.
Finish by placing the fried egg in the center and drizzling with gochujang and toasted sesame oil before mixing.
