Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon fillet served with creamy garlic-infused cauliflower mash and steamed green beans, finished with a squeeze of bright lemon.
INGREDIENTS
6.5 ounces Salmon Fillet
2 cups Cauliflower florets
1 cup Green beans
1 tablespoon Olive oil
2 tablespoons Nonfat Greek yogurt
1 clove Garlic
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water for 10-12 minutes until very soft.
During the last 5 minutes of steaming the cauliflower, add the green beans to the steamer basket to cook until they are crisp-tender.
Transfer the steamed cauliflower to a bowl and mash with the Greek yogurt, minced garlic, and a pinch of salt until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat until shimmering.
Place the salmon in the skillet skin-side up and sear for 4 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until the fish is just opaque in the center.
Serve the seared salmon over the garlic cauliflower mash with the steamed green beans on the side.
