Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared salmon fillet paired with garlicky sautéed green beans and nutty brown rice, finished with a squeeze of zesty fresh lemon.
INGREDIENTS
7 oz Wild Atlantic Salmon Fillet
1/2 cup Cooked Brown Rice
1 cup Fresh Green Beans
1 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
1 tbsp Fresh Lemon Juice
PREPARATION
Prepare the brown rice according to package instructions and set aside half a cup for the meal.
Trim the ends of the green beans and mince the garlic cloves.
Pat the salmon fillet dry with a paper towel and season lightly with sea salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 3-4 minutes until cooked through to your preference, then remove from the pan.
In the same skillet, add the remaining oil and the green beans, sautéing for about 5 minutes until tender-crisp.
Add the minced garlic to the beans and cook for 1 minute until fragrant.
Plate the seared salmon alongside the brown rice and garlic green beans.
Drizzle the fresh lemon juice over the salmon and vegetables before serving.
