Cut the chicken breast into 1-inch cubes and the sweet potato into 1/2-inch cubes.
In a small bowl, whisk together the garlic powder, onion powder, smoked paprika, sea salt, black pepper, and dried oregano.
Toss the sweet potato cubes with 0.5 tbsp of olive oil and one-third of the spice mixture.
Place the sweet potatoes in the air fryer basket and cook at 400°F for 8 minutes.
While the potatoes cook, toss the chicken, broccoli florets, and red bell pepper with the remaining 1 tbsp of olive oil and the rest of the spice mixture.
Add the chicken and vegetable mixture to the air fryer basket with the sweet potatoes.
Air fry everything together at 375°F for 10-12 minutes, shaking the basket halfway through, until the chicken is cooked through and the vegetables are tender.
Serve immediately or portion into containers for meal prep.
