Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared wild salmon served with garlic-sautéed green beans and nutty brown rice, finished with a squeeze of bright lemon.
INGREDIENTS
7 ounces Wild Atlantic Salmon
1/2 cup Cooked Brown Rice
1 cup Fresh Green Beans
1 teaspoon Avocado Oil
1 clove Garlic, minced
1 tablespoon Fresh Lemon Juice
PREPARATION
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat half of the avocado oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4 to 5 minutes until the skin is crisp.
Flip the salmon and cook for another 3 to 4 minutes until the center is just opaque.
Remove the salmon from the pan and set aside to rest.
Add the remaining oil to the same skillet along with the trimmed green beans and minced garlic.
Sauté the beans for 5 to 6 minutes until they are tender-crisp and the garlic is fragrant.
Serve the seared salmon over a bed of warm brown rice with the garlic green beans on the side and a fresh squeeze of lemon juice.
