6.5 oz Top sirloin steak
1 cup Asparagus spears
0.5 tbsp Grass-fed butter
1 tsp Avocado oil
1 clove Garlic
0.5 tsp Fresh rosemary
0.5 tsp Fresh thyme
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Pat the steak dry with paper towels and season both sides with sea salt and black pepper.
Trim the woody ends off the asparagus and toss them in a small bowl with half of the avocado oil.
Heat a cast-iron skillet over medium-high heat with the remaining avocado oil until shimmering.
Place the steak in the hot skillet and sear for 3-4 minutes per side for medium-rare, or until your desired doneness.
During the last 2 minutes of cooking, add the butter, minced garlic, rosemary, and thyme to the pan; tilt the pan and spoon the foaming butter over the steak repeatedly.
Remove the steak to a plate to rest for 5 minutes.
In the same skillet, sauté the asparagus for 4-5 minutes until bright green and tender-crisp.
Serve the steak sliced against the grain with the asparagus and any remaining pan juices.
