INGREDIENTS
4 oz Salmon Fillet
0.75 cup cooked Whole Wheat Noodles
2 large Egg Whites
2 cloves Garlic
1 tsp minced Fresh Ginger
0.5 tsp Olive Oil
1 tbsp Low Sodium Soy Sauce
1 stalk Green Onion
PREPARATION
Pat the salmon fillet dry and season lightly with salt and pepper.
Heat a non-stick skillet over medium-high heat with half a teaspoon of olive oil.
Sear the salmon fillet for about 3-4 minutes on each side until the exterior is crisp and the interior reaches your preferred doneness. Remove the salmon and set aside.
In the same skillet, add minced garlic and ginger. Sauté for about 30 seconds until fragrant.
Add the cooked whole wheat noodles to the skillet along with the egg whites. Stir constantly, allowing the egg whites to lightly scramble and coat the noodles.
Drizzle in the low sodium soy sauce, tossing everything to combine and heat through.
Plate the garlic noodle stir fry and top with the seared salmon. Garnish with chopped green onion.
Serve immediately and enjoy your balanced dinner.
