Enjoy a vibrant dish featuring tender mahi mahi fillets encrusted with crunchy, lightly toasted pistachios, paired with a refreshing mango salsa that brings a burst of tropical sweetness and zesty lime. The textures and flavors harmonize perfectly in this satisfying meal.
INGREDIENTS
6 oz Mahi Mahi Fillet
1/4 cup Pistachios, Shelled (crushed)
1/2 cup Diced Mango
1/4 cup Diced Red Bell Pepper
2 tbsp Finely Chopped Red Onion
2 tbsp Chopped Cilantro
1 tbsp Lime Juice
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F.
Season the mahi mahi fillets on both sides with salt and pepper.
Finely crush the pistachios in a food processor or place them in a sealed bag and gently smash them with a rolling pin until coarsely ground.
Coat each fillet evenly with the crushed pistachios, pressing lightly to adhere the coating.
Place the coated mahi mahi fillets on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until the fish flakes easily with a fork.
While the fish is baking, prepare the mango salsa by combining the diced mango, red bell pepper, red onion, and cilantro in a bowl.
Add lime juice to the salsa mixture and stir well. Adjust salt and pepper to taste.
Once the fish is done, plate the mahi mahi and generously spoon the fresh mango salsa over the top. Serve immediately.
