1 large Egg
0.33 cup shredded Reduced Fat Mozzarella Cheese
1 tbsp Grated Parmesan Cheese
0.25 cup Tomato Sauce (Low Sugar)
60g Grilled Chicken Breast
5g Fresh Basil
5g Fresh Oregano
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
Rice the cauliflower by processing 300g of raw cauliflower in a food processor until it resembles coarse crumbs.
Transfer the riced cauliflower to a microwave-safe bowl and microwave on high for 5 minutes. Allow it to cool slightly.
Place the cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
In a mixing bowl, combine the drained cauliflower, one large egg, 0.33 cup shredded mozzarella, and 1 tablespoon grated Parmesan. Season with a pinch of salt and pepper. Mix until well combined.
Press the cauliflower mixture onto the prepared baking sheet into a thin, even round crust.
Bake the crust in the preheated oven for 15-18 minutes, until it turns golden and crispy.
Remove the crust from the oven. Spread 0.25 cup of low sugar tomato sauce evenly over the crust. Top with 60g of grilled chicken breast slices.
Scatter 5g each of fresh basil and fresh oregano over the top. Optionally, add a little extra mozzarella or Parmesan if desired.
