Enjoy a light yet flavorful dinner featuring a perfectly baked herb-crusted salmon paired with a medley of vibrant roasted vegetables. The fresh herbs and zesty lemon enhance the natural taste while a drizzle of olive oil ties the dish together beautifully.
INGREDIENTS
5 ounces Salmon Fillet
1 tsp Olive Oil
1 tbsp Fresh Mixed Herbs (parsley, thyme, rosemary)
1 tbsp Lemon Juice
1 cup chopped Zucchini
1 medium Red Bell Pepper
0.5 cup sliced Red Onion
Salt and Black Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C).
Place the salmon fillet on a baking tray lined with parchment paper.
In a small bowl, mix the olive oil, fresh herbs, lemon juice, salt, and pepper. Brush this herb mixture evenly over the salmon.
In a separate bowl, toss the chopped zucchini, sliced red bell pepper, and red onion with a pinch of salt, pepper, and an extra drizzle of olive oil if desired.
Spread the vegetables around the salmon on the baking tray.
Bake in the preheated oven for about 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
Remove from the oven and let it rest for a couple of minutes before serving.
