Enjoy a vibrant bowl featuring perfectly seared, marinated tofu paired with fluffy steamed quinoa and tender asparagus. The bright marinade of soy, lemon, garlic and ginger elevates the dish, creating a balanced, satisfying dinner that’s as nourishing as it is delicious.
INGREDIENTS
200g Firm Tofu
1/2 cup Cooked Quinoa
100g Asparagus
1 tsp Low-Sodium Soy Sauce
1 tsp Fresh Lemon Juice
1 clove Garlic
1/2 tsp Grated Fresh Ginger
PREPARATION
Press the tofu to remove excess water, then cut it into 1/2-inch thick slices or cubes.
In a bowl, whisk together the low-sodium soy sauce, fresh lemon juice, minced garlic, and grated ginger to create the marinade.
Coat the tofu pieces in the marinade and let sit for at least 15 minutes to absorb the flavors.
While the tofu is marinating, steam the asparagus until just tender, about 4-5 minutes, and prepare the quinoa if not already cooked.
Heat a non-stick skillet over medium-high heat and lightly spray with cooking spray. Sear the marinated tofu until golden and slightly crisp on both sides, about 3-4 minutes per side.
Assemble the plate by placing the seared tofu over a bed of steamed quinoa and arranging the asparagus on the side.
Drizzle any remaining marinade over the tofu and serve immediately.
