Seared Salmon with Garlic Spinach and Brown Rice
Enjoy a vibrant plate of perfectly seared salmon accompanied by garlicky sautéed spinach, hearty brown rice, and creamy avocado slices. This dish balances the rich flavors of tender salmon and zesty garlic, with a nutritious crunch from fresh spinach and the wholesome goodness of brown rice, all brought together with a light drizzle of extra virgin olive oil.
INGREDIENTS
6 oz Salmon Fillet
1.25 cups cooked Brown Rice
2 cups raw Spinach
1 tbsp Extra Virgin Olive Oil
1 clove Garlic
1 portion Avocado (~50g)
1 tbsp Lemon Juice
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry and season lightly with salt and pepper on both sides.
Heat half of the olive oil in a skillet over medium-high heat. Add the salmon, skin-side down if applicable, and sear for about 4-5 minutes per side until golden and just cooked through. Remove and set aside.
In the same skillet, add the remaining olive oil and minced garlic. Sauté until fragrant, then add the spinach and a pinch of salt. Toss until the spinach wilts, about 2-3 minutes.
Reheat the pre-cooked brown rice if needed, or serve it warm as is.
Plate the brown rice as the base, top with the garlic spinach, and place the seared salmon on top.
Drizzle with lemon juice and garnish with sliced avocado on the side. Serve immediately.
