Enjoy a vibrant dish featuring crispy, pan-seared tofu paired with a luscious, tangy peanut sauce accented by a burst of edamame. This recipe brings together the crunch of coated tofu with a silky, savory sauce, making it a fulfilling meal for any time of day.
INGREDIENTS
200g Firm Tofu
1/2 cup Shelled Edamame
2 tbsp Smooth Peanut Butter
1 tbsp Cornstarch
1 tsp Sesame Oil
1 tbsp Low-Sodium Soy Sauce
1 tbsp Lime Juice
1 clove Garlic, minced
1 tsp Fresh Ginger, grated
30 ml Water
PREPARATION
Press the tofu for at least 15 minutes to eliminate excess water, then cut it into 1/2-inch slices or bite-sized cubes.
In a bowl, toss the tofu lightly with cornstarch to create a crisp coating.
Heat sesame oil in a non-stick skillet over medium-high heat. Add the tofu pieces and pan-sear for 3-4 minutes on each side until golden and crispy. Remove tofu and set aside.
In the same skillet, add garlic and ginger; sauté for about 30 seconds until fragrant.
Prepare the peanut sauce by whisking together peanut butter, low-sodium soy sauce, lime juice, and water. Adjust the thickness with a bit more water if needed.
Return the tofu to the skillet and gently toss with the peanut sauce to coat evenly.
Fold in the shelled edamame and heat through for about 1-2 minutes.
Plate the tofu and edamame mixture and drizzle any remaining sauce over the top. Serve warm and enjoy!
