Salt & Pepper to taste
PREPARATION
Preheat your oven to 350°F and lightly grease a mini muffin tin with olive oil.
In a skillet over medium heat, add the olive oil and sauté the chopped red bell pepper for 2-3 minutes until slightly softened.
Add the fresh spinach to the skillet and sauté until wilted, about 1-2 minutes. Remove from heat and set aside.
